Affordable Interior Designer Recipe For Lemon Ricotta Cookies



Now, let's get started! Here's what you'll need:

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup confectioners' sugar

1/2 cup unsalted butter, softened

2 large eggs

2 teaspoons grated lemon zest

2 tablespoons freshly squeezed lemon juice

1 cup whole milk ricotta cheese

1 teaspoon vanilla extract

Salt, to taste

Confectioners' sugar, for dusting optional

Preheat your oven to 375°F 190°C. Line a baking sheet with parchment paper or a silicone mat.


In a medium bowl, whisk together the flour, granulated sugar, and confectioners' sugar. Add the softened butter and mix until the dough comes together in a ball.


In a separate bowl, whisk together the eggs, lemon zest, lemon juice, and vanilla extract. Add the ricotta cheese and mix until smooth.


Add the wet ingredients to the dry ingredients and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.


Scoop the dough into balls, about 1 tablespoon each. Place the balls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.


Bake for 18-20 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
