Field Note · Kitchen Materials
Calacatta marble is a quarried natural stone from the Apuan Alps in Italy with a recognizable white field and dramatic gray veining. Calacatta-look quartz is an engineered material from Caesarstone, Cambria, Silestone, MSI, and others that mimics the appearance with a fraction of the maintenance. The right choice depends on the homeowner’s willingness to accept etching, the natural light in the room, and the budget tolerance.

Real Calacatta Marble
Quarried in Carrara, Italy. Composition: calcium carbonate. Soft (Mohs hardness 3-4). Etches under any acid contact — lemon juice, tomato, vinegar, wine. Stains under oils if unsealed. Develops a characteristic patina over years. Price: $80-$250 per square foot for the slab; with fabrication, $150-$500 installed depending on book-matching, edge profile, and substrate.
Calacatta-Look Quartz
Engineered stone — roughly 90-93% crushed quartz crystal bound with polymer resin and color pigment. Hardness around 7 (Mohs). Non-porous, non-etching, stain-resistant, no sealing required. Visually convincing in a showroom; under raking light at five years, the slight uniformity of the pattern reads as engineered to a trained eye. Price: $50-$120 per square foot installed.
Where Each One Wins
Calacatta marble wins for homeowners who actually want the patina, will accept the etch, and want a kitchen that looks 50 years old in five years. Calacatta quartz wins for homeowners who want the visual without the maintenance — particularly in homes with kids, with two cooks, with an active entertaining schedule. Neither is wrong; the wrong call is installing real Calacatta in a kitchen that will not tolerate the patina.
How to Test Which One You Are
Pour a few drops of lemon juice on a sample slab from the fabricator. Wait 5 minutes. Wipe. If the etch mark visible afterward upsets you, you want the quartz. If you find the etch mark beautiful in five years of constant cooking, you want the marble.
Granite Bay Context
On Granite Bay luxury kitchen remodels — particularly the Los Lagos and Camino Del Avion estates — Calacatta is a near-constant request. We do the etching test with the homeowner in showroom before placing the order, because the difference between a homeowner who loves the patina and one who hates it shows up at six months. our Granite Bay projects for how we run the Granite Bay material-selection workflow.
