Countertop pricing is one of the most opaque line items in a kitchen renovation. The same nominal material ("Calacatta marble," "quartzite," "onyx") can vary five-fold in price depending on origin, slab thickness, fabrication shop, and edge profile. The expensive part is rarely the slab itself.

The Real Top of the Ladder
Bookmatched honed Calacatta Borghini from a single block, 3 cm: $400–$800/sqft installed for a typical kitchen. Onyx, lit from below for translucency: $300–$700/sqft. Patagonia quartzite with the dramatic blue-green veining: $250–$500/sqft. End-grain butcher block in walnut from a custom shop: $200–$400/sqft. These are the materials people see on Architectural Digest covers and want.
What Actually Drives It
Block selection. A single bookmatched run of Calacatta requires the fabricator to source two adjacent slabs from the same block, which Italian quarries reserve for high-end accounts. Thickness — 3 cm slab costs more than 2 cm, and a mitred edge to look like a 6 cm slab requires two slabs and twice the fabrication labor. Edge profile — eased and mitred are baseline, ogee and waterfall add fabrication hours. Backsplash continuity — slab backsplash with veining-matched to the counter requires a second slab and is often where the per-sqft number doubles.
What’s Marketing
"Imported from Italy" on a slab that ships from a domestic wholesaler. "Bookmatched" on a single slab. "Premium-grade" quartzite that is technically dolomitic marble (etches under acid). The Natural Stone Institute’s geological identification standards are the reference — ask the fabricator for the geological classification, not the marketing name.
Hidden Cost Items
Substrate (3/4" ply, sometimes plywood-and-steel for unsupported overhangs). Seam location — a 12' run with no seam requires a slab that physically exists at that length, which is rarer than the showroom suggests. Sealing schedule (impregnator sealer at install, again at month 6, then annually for marble and limestone). Sink cutout for an undermount in a soft stone — the fabricator’s labor doubles.
